A classic Tarka gravy base to make a traditional Madras curry from the Southern regions with bounties of coriander, cumin and fenugreek blended with aromatic spices. Simply add your veges, soy or protein to the Madras Tarka gravy base & sauté. Add creams, garnish & serve – it’s that easy!

This Tarka can get you to make either a DRY curry ideal for salads, wraps and pita pockets, or a GRAVY curry that goes great with basmati rice, naan or breads.

NB: If you want to make a GRAVY curry, it is best to make a DRY curry first, to help infuse the spices. Then add water and creams slowly to build the gravy.
