Sabzi is a select vege preparation cooked with aromatic Indian spices to create a wonderfully versatile & flavourful dish that can be accompanied with breads & a variety of grains. It can be made both as a dry or a gravied option.

Sabzis are becoming ever more popular with every market segment as the customer desires lighter, healthier & diverse menu offerings. A growing customer base is requiring these options and it is great to capitalise on this trend.

For centuries, sabzis have been an essential part of India’s rich culinary tradition, served at just about every meal. They are yum, nourishing, healthy & nutrient-rich. The variation in regional sabzi dishes is vast and you can make a different sabzi each day.

PREP

Wash select veges (& rinse tofu). Chop into bite sized pieces. Pre-cook by steam, microwave or stir fry in veg oil.

Mix your choice of Sabzi Tarka with water in a fry pan & bring to a boil. Add pre-cooked prep veges / tofu & mix through. Cook until done. Sabzis can be bulk cooked & refrigerated.

To make an order, simply sauté fresh onion, ginger julienne & fresh coriander in veg oil & add 200g prep sabzi. Add coconut cream as required. Serve with a selection of breads / panini / quinoa / couscous/ grilled veges / avocado / fries – dress and garnish.
